Dima Moulding Machine DM26/E

The DM26/E is an electrical moulding machine manufactured by Dima. Moulds any kind of pasta filata cheese from 1 to 650 g. The machine is ideal for production mozzarella with very high humidity content and has an adjustable product capacity from 200 to 2000 kg/h.

Description

Moulding of mozzarella of any kind of “pasta filata” cheese. A highly versatile machine, designed for the production of any kind of mozzarella from 1 up to 650 g, by moulding with moulding drums, as well as provole, scamorze or generally products with ball-on-ball shape by means of special moulding drums. If necessary the machine is ideal also for the production of mozzarella with very high humidity content. 

This electronic machine version is equipped with system for automatic detection of the product size (a DIMA patented system), that automatically detects and recognizes the product size of the assembled moulding drum, allowing the control system to automatically self-adjust for this specific product size the optimum parameters of the speed of the augers and the moulding drum, thus preventing any error by the operator who just has to replace the moulding roller. 

Products include: spherical mozzarella from 1 up to 650 g; scamorza and provole; slices, disks or other particular shapes; cylindrical products like pizza cheese, provolone etc. up to 3 kg; continuous cords for the manual production of treccia (tress cheese), nodino (knot cheese), oaxaca and string cheese; and cheese dough sheet.Production capacity adjustable from 200 up to 2.000 kg/h.

The cheese mass coming from the cooking-stretching machine falls into the hopper of the moulding machine. The two augers inside the machine body, push the hot cheese mass towards the rotating moulding drum to uniformly fill the moulding cavities, in order to obtain a constant product size.

The machine body that contains the augers can work in horizontal position or be inclined up to 23° towards the moulding drum to adjust in optimal way the humidity content of the product. 

The outer surface of the auger area is surrounded by a heating jacket full of water. The water inside the heating jacket is heated by electrical resistances, in order to keep constant the cheese temperature and to obtain excellent results regarding the final product.

The rotation of the moulding drum causes the cutting of the cheese portions contained in the moulding cavities.

The particular shape of the moulding cavity radius ensures perfect sealing of the cut fibers.

The speed of the augers and the moulding drum can be separately adjusted, depending on the moulding drum type, the humidity degree of the product and the desired hourly production. The machine can be supplied with moulding device, complete with moulding tube for cylindrical products up to 3 kg or other moulding accessories for various product sizes.

The moulding machine mod. SP24 is made entirely of AISI 304 stainless steel, the parts in contact with the product are treated with Teflon certified for the food industry.
