Dima Moulding Machine SP21
Moulding into blocks of any type of “pasta filata” cheese. Moulding machine designed for the moulding of “pasta filata” cheese, particularly indicated for products with low humidity content, such as pizza-cheese, provolone, kasseri and kashkaval. The machine is used to portion the product and to give it the first cylindrical or rectangular shape. Subsequently the product has to be manually put in external moulds, which depend on the final product shape and are transferred into a cooling vat to complete the cooling phase.
Products include: Cheese blocks from 300 g up to 6 kg, of cylindrical or parallelepiped shape; and spherical products from 10 g up to 500 g. Production capacity adjustable up to 1.000 kg/h.
The cheese mass coming from the cooking-stretching machine continuously feeds the hopper of the moulding machine. The action of two counter-rotating augers pushes the cheese mass into the moulding tubes. Each moulding tube is equipped with a piston which height is adjustable to control the product weight. The filled moulding tube is automatically moved to the discharge section. When the moulding tube is in discharge position the piston pushes the product downwards and the moulding tube returns again to the filling position. When the product size or weight have to be modified the moulding machine can be equipped with a set of changeable moulding tubes. In this way the product size and weight can be easily and quickly changed.
The number of moulding tubes depends on the product type and size. The moulding machine mod. SP21 is made entirely of AISI 304 stainless steel, the parts in contact with the product are treated with Teflon certified for the food industry.
