Dima Moulding Machine DM61-1200
Moulding in blocks of any kind of “pasta filata” cheese, particularly of pizza cheese. The moulding machine DM61 with pre-cooling moulding head is a significant response to the expanding demand for machines that are able to automate expensive and contaminating manual processes.
In fact, in the traditional working process for the production of cylindrical or parallelepiped products is required the manual filling of the moulds, the subsequent cooling and then the emptying, still manual, of the product from the moulds.
The moulding machine DM61 is able to automate such tasks, as it combines to the portioning and moulding operations also a cooling phase inside moulds suited to keep stable the product shape, thus eliminating the use and the introduction of external moulds. The cooling period varies depending on the hourly production rate and the product dimensions.
Products include: filoni, silani, provoloncini, and pizza-cheese of cylindrical and/or parallepiped shape with various product sizes from 100 to 3.000 grams. Production capacity adjustable from 300 up to 2000 kg/h.
The cheese mass coming from the continuous cooking-stretching machine falls into a hopper which feeds a couple of counter-rotating augers. The rotary movement of the two augers pushes the cheese mass towards the moulding section that consists of a carousel moulding head equipped with a set of circular, rectangular or square moulds, depending on the Customer’s request.
The moulding head rotates slowly and during the time that elapses between the filling and the emptying of the moulds the product surface is pre-cooled by means of cold water, which circulates in the special heating jacket that surrounds all moulds placed on the moulding head.
The pre-cooling of the product surface is sufficient to enable the product to maintain its shape, thus making possible the direct transfer of the product that falls from the moulding machine into a cooling or brining vat without the use of further external moulds.
The moulding carousel machine can be used with only one or more moulding heads, thus allowing the production of various product types with different shape and weight.
The moulding machine mod. DM61-1200 is made entirely of AISI 304 stainless steel, the parts in contact with the product are treated with Teflon certified for the food industry.
